Okay, plant cooks, I need your help, please!
I am getting overwhelmed with garlic scapes (this is just today's!). Chopping a couple up each day on our salads isn't getting through them fast enough.
Has anyone got any ideas, recipes etc? Plant based only, please.

@EllieK @wfpb @vegan they are great wherever you want a mild garlic flavor. They are excellent in Just Egg frittatas. Throw them in a Buddha bowl. Add them near the end to any veggies you’re cooking up.

@EllieK @wfpb @vegan coarse salt helps with the texture when you add it to the blender, and citrus juice can be a pleasant note. doesn't take much of either.

Quick and delicious lunch for a summer day:
Tofu scramble with plenty of mushrooms, onions, garlic, tomatoes and a jalapeno pepper, some Kala namak (black salt). It's served on a bed of cooked kale, peas and sweetcorn and garnished with arugula from our garden.

    @Fripi @EllieK @werawelt @wfpb @vegan With regards to diets associated with longer, healthier life, the Mediterranean Diet seems to be consistently leading the way, with lots of science backing up the claim. This does emphasize healthy fats, whole grains, fruits, vegetables, beans, nuts and seeds. And, no, unless you have a diet deficient in something, you don't need vitamins, B12 or otherwise.

    This diet includes fish and poultry, that is why there is no B12 needed.

    But also I can't find a study that would support your claim, can you point out any good quality evidence? All studies I looked at were basically not able to make such statements based on the design.

    Thanks for the pointer. I am not vegan, though. I eat a whole-food non-animal diet for health reasons, and I use Red Boat Fish sauce.

    Oh, my! Excellent chili. It's the best so far. Tempeh-based, it's a whole-food non-animal chili. Also fits a vegan diet. Tempeh is homemade. Zero added salt. Substantially more than a single serving.

    High levels of ultra-processed foods linked with early death, brain issues.

    I found that for me, it was much easier to cut out highly-processed foods altogether (I went on a whole-food non-animal diet) that it was to "cut back." By cutting them out altogether, I lost my taste for them in just a few weeks.

    That's the definition from a BMJ study of the effects of UPF on all-cause mortality (not good).

    WFPB carrot paratha!

    Pretty easy:

    • 1 lb (16 oz) whole wheat flour (I used mostly black emmer with some Turkey red, I think)
    • 2 oz tahini
    • 1 1/8 tsp salt
    • 1.5 lb carrots grated
    • 1/2 tsp salt
    1. Mix all dough ingredients up to carrots in one bowl
    2. Mix grated carrots with 1/2 tsp salt in a separate bowl
    3. Slowly add salted grated carrots to other dough ingredients and keep mixing (easiest to do by hand).

    Change in direction in my cooking after realizing that some people do not yet make tempeh.

    So I'll cook beans and grain to use in my recipes — perhaps a batch of BROL (https://nutritionfacts.org/recipe/basic-brol-barley-rye-oats-and-lentils/). For that, I'll use purple barley & sprouted rye, which I have on hand.

    To begin, I'll make a batch of soybeans and a batch of kamut.

    I'm looking forward to the change for the new texture: tiny little chewy bits.

    Turmeric paste turns out to be really useful, at least for my sort of cooking. Recipe makes 10 fl. oz. / 295 ml.
