New ferment underway. This batch follows what seems to be my now-standard list of ingredients except that I had forgotten to buy Medjool dates. Next time I'll remember.

3 jars of chopped vegetables covered with clear liquid. Vegetables are white, light green, dark green, and orange. The smaller jar in front has a lide with a white plastic airlock; the two larger jars in bacck each have a can of toatoes sitting on the lid. The jars are on a paper towel in a small rimmed baking sheet.
