I know people hate the brave browser, and probably rightfully so, I haven't bothered looking for replacement yet so I'm still using it, but I just open YouTube through it and never see any ads at all. Maybe there's a better privacy respecting browser that has that block?
I won't say it's better but duckduckgo both through their Android app and their search engine gives you the option of 'watch here' which is proxied, or 'watch on youtube'
When I have that happen, it's usually someone (I'm guessing on iPhone), sending an attachment to a group thread. It shows up in the group thread, but then it'll pop up in that person's individual thread and give me that warning. Not sure if that's what's going on. I think it also sometimes happens if I'm using the browser on my desktop for messages.
A contactless card in the back of your phone case?

I personally won't bring my C&P / contactless card out of the house unless necessary since it allows would-be finders instant access to withdrawals from my bank account, without any authentication required whatsoever unlike, GPay on my phone which at the very least needs my fingerprint?
It also pisses me off to be honest that my bank won't supply me with a C&P, non-contactless card like my last bank did :/
There are alternatives, but if your concern is privacy, you won't like them either. Apple. Samsung, Venmo, PayPal, etc. You will have to trust some third party who probably doesn't deserve it.
Crypto was supposed to be the open-source payment method that was totally trustless, but then the tech bros decided they liked Lambos more, and now it is a store of value that people are encouraged to hoard, and not spend. (The worst thing that ever happened to crypto was for the price to go up.)
I think the most private NFC payment method right now is an NFC-enabled physical credit card. It keeps more of your financial life away from the other spies in your pocket. That doesn't keep your credit card provider from selling your info, but they would do that regardless of whether the card is in your phone or not.
I think key to my privacy model is that I run microG, so most info isn't going to Google anyway. Firefox+add-ons takes care of enough of the remaining trackers etc so that I feel comfortable.
This particular search is my attempt to regain a bit of the convenience I've lost in the process of gaining a lot of privacy; I'm ok with doing things the 'slow' way, but curious to see if there's a way to get some modern nicities without losing much (ideally any) privacy.

If you're only interested in flashing the European version of MIUI/HyperOS then yes, it's very much straightforward and I can see this device is supported.
If you however want to install a custom rom (LineageOS based) then it's bit more complicated.
Yep. Honestly, Xiaomi is my go-to to recommend to people looking for a budget hackable device. But if you have $700 on hand then Pixel is a way more sensible choice
If it allows you to unlock the bootloader, flashing isn't really that difficult anymore. What really matters is how well the device in question is supported by the custom ROM and the community. If you can find one that's officially supported by lineageOS, for example, they have good documentation and guides to walk you through it. If the ROM is less popular, you might end up in Telegram channels asking for assistance.
The most important thing you can do is research what you're planning to flash. Check XDA, find Telegram, Matrix, or Discord channels (which I know is extremely annoying), look for other people that have attempted to do this and note what issues they seem to have had.
